Founded in Healdsburg in 2006 by Yoav Gilat, Cannonball was created with the express goal of making quality Californian Cabernet Sauvignon that was priced below $20, something that has become more and more difficult in the Golden State. By 2010 the winery decided the time was right to introduce more varietals, including Chardonnay, Merlot, and Sauvignon Blanc. Today the winery is led by head winemaker Ondine Chattan, who previously worked at Cline Cellars and Ridge Winery. Her approach in the cellar is to craft approachable wines that can be enjoyed with the least amount of fuss.

The ELEVEN series is geared towards more site specific wines, which still retain Cannonball’s telltale obliging character. The grapes for this Chardonnay were harvested from vineyards within the cool climate Sonoma Coast AVA. A portion of the wine was barrel-fermented in 20% new French oak and 15% second fill barrels. A further 40% of the blend was aged sur-lie in neutral French oak to build richness and texture. Medium bodied on the palate, this Chardonnay has vivid notes of meyer lemon, white peach, yellow pear, and honeycomb. Slightly toasty on the finish, the ELEVEN is a subtle example of Californian Chardonnay.
