The steep vineyards of Ribeira Sacra have been cultivated since the time of the Romans. By steep, we mean STEEP. Like Côte-Rôtie or Mosel steep. Situated in eastern Galicia, this appellation is a world away from the flat terrain of the Spanish meseta. Overlooking the Mino and Sil rivers, the vineyards enjoy a moderate climate and benefit from free-draining slate and granite soils. Not a place for the faint of heart, it takes a certain type of grower to succeed in Ribeira Sacra. Pedro Rodríguez of Bodega Guímaro descends from a long line of colleteiros (winemakers) working in the Amandi area, Ribeira Sacras’ most prized subzone. His parents Manolo and Carmen, still play an active role in the vineyard. In addition to grapes, they also raise chickens, rabbits, pigs, and cultivate a sizable vegetable patch. Before 1991, Pedro’s family produced wines only for themselves and the local cantina. It wasn’t until the family met oenologist Luis Buitrón that they moved to estate bottled wines. The name of the winery, “Guimaro” (meaning “rebel” in the local dialect), was the nickname of Pedro’s grandfather. Today the family own 9 hectares of vines, and farm an additional 16 hectares that are leased. Pedro’s approach in the cellar is decidedly traditional: organic viticulture, wild yeast fermentations, foot treading, inclusion of stems, low sulphur regime, ageing in old wood.

This wine is made from grapes harvested from a 6 hectares vineyard in the subzone of Amandi. The vines range from 40 to 60 years old in age. In addition to Mencia, a small percentage of indegenous Galician  grapes are included in the blend. Fermented spontaneously with 100% whole clusters, half of the wine was raised in foudre and the other half in used 225 & 500L French barrels for around one year. More serious than the Tinto, the Camino Real has firm structure and lingering tannins. A core of sour black cherry is complemented by notes of wild herbs and crushed gravel. A perfect steak wine.
