Heralded all across the globe, Etienne Calsac is a world class winemaker whom we had the esteemed pleasure of meeting with while some of our staff members took a trip to Champagne, France in the spring of 2022.
Having been lucky enough to be allocated several cases of his stunning Blanc de Blanc Champagnes, we are so excited to announce that this rare find is available for purchase at all three of our stores; the only stores in all of Alberta where you can purchase these amazing bottles.
Étienne began farming 2.8 hectares of what were his grandparents' vineyards, which had previously been allocated to separate Champagne grande maisons. With terroir, that ever elusive and yet ever important ingredient that makes Champagne so special, at the forefront of his decision making, Étienne chose to farm his vineyards gently. He uses cover crops between rows, plows by horse, and farms organically (though is not certified). In the winery, set just outside of Grand Cru village Avize, each parcel is vinified individually. Every bottle spends 36 months on the lees plus 3 more months in bottle after disgorgement. Étienne's wines are truly special and we are so excited to have the chance to share them with you.

100% Chardonnay from vineyards across Champagne, 70% of the grapes come from the village Grauves. 30% of the final blend comes from a perpetual reserve wine Étienne first started in 2011. The majority of the wine is spontaneously fermented in stainless steel, while 20% is fermented in barrels. The finished Champagne is racy with chalky salinity. Its lithe structure leaves this flagship wine elegant and finessed.
